CAMPFIRE PANCAKES WITH CHARRED STRAWBERRIES

This pancake and strawberry combo is a great campfire breakfast, whether you are camping or just fancy cooking alfresco in the morning and gathering in the garden.

Wood Type: Logs and Charcoal

Ingredients:
1kg Hazel Logs
300g Strawberries
200g Whole Wheat Flour
Pinch Sea Salt
1 tbsp Caster Sugar
1 tsp Ground Cinnamon
1 Egg
300ml Full Fat Milk
A Little Butter, to fry

 

INSTRUCTIONS

Prepare your embers and once ready place a non-stick skillet on the fire to warm.

Add the dry ingredients to a mixing bowl and beat in the egg and milk. Toss a little of the butter in the skillet, allow to melt and begin to bubble before spooning in roughly a sixth of the pancake batter. The mix should splay out to about 10cm wide as it firms up and cooks on one side.

Fry for roughly 1 minute until the edges of the pancakes are bubbling. Turn over and fry for another 30 seconds until golden on both sides. You need to do this another 5 times to use up the rest of your batter. Once you get to your third or fourth pancake its time to charr the strawberries. Thread a generous amount on the end of some skewers, leaving plenty of room for your hand to turn them and to hang away from the fire so it doesn't heat the skewer where you need to pick it up.

Charr them in the embers for the last two or three minutes of cooking time whilst you fry your last pancakes and everything will be ready at the same time. We like to serve with hot honey, or honey infused with a whole chilli so an extra kick.
